This recipe comes from Dr. Michael Greger's wonderful cookbook, "How Not to Die Cookbook". This recipe is full of anti-oxidants and anti-inflammatory foods. I've adapted this a wee bit from his original recipe. Enjoy! You can double this recipe for a crowd!

  • 1/2 ripe Hass avocado
  • 1 1/4 cups blueberries (or other berries of your choosing)
  • 3 T cacao powder
  • 2 T almond or peanut butter
  • 1/2 cup Date syrup
  • 1 1/2 cups almond milk (or your favorite non-dairy milk)
  • 1/4 cup chia seeds

Toppings:  Ground almonds, non-dairy chocolate nibs, Non-dairy cool whip, raspberries, additional fresh berries

Peel avocado and place avocado meat into food processor. Add the blueberries, cacao powder, nut butter, the date syrup and almond milk into food processor. Blend until very smooth and pour into a bowl. Whisk in the chia seeds until well mixed. Cover and refrigerate for at least 8 hours. 

Garnish pudding with favorite toppings.
