A Green Nosh participant brought these yummy snacks to one of our monthly gatherings. It's recommended that since they're 'energy' snacks, these bites are nice to serve at parties to kick the cravings for other sweets. Also great idea to keep in your car for a healthy snack while traveling.

  • 2 carrots
  • 1 cup raw almonds
  • 1 cup raw walnuts
  • 6 dates
  • 1 tsp vanilla extract
  • 1/4 cup oats
  • 1 tsp pumpkin pie spice
  • 1 tsp raw honey
  • 1/4 cup shredded coconut for rolling

Place all ingredients, except the coconut, in high speed blender. Blend until ingredients are large crumb size. Roll into balls. Roll in the coconut. Store in airtight container in frig.
