Back in 2009 I found a fabulous vegan site; they were few and far between back then, called the Vegan Culinary Experience: www.veganclinaryexperience.com. The one change I made was using another sweetener instead of agave nectar.

  • 1 red D'Anjou pear
  • 1 T raisins
  • 2 tsps cinnamon
  • 1 tsp cardamom
  • 1 tsp oil
  • 1/2 tsp lemon juice
  • 2 T maple syrup

Cut pear in half and core.

Place raisins in the boat created when cored. (You can also add some chopped walnuts.) Sprinkle with cinnamon and cardamom. Bake for 20 minutes at 350. (Make sure pan is very lightly oiled so pear doesn't stick.

When done sprinkle with lemon juice and maple syrup.

Serves 2!
