- 1/2 cup orange juice
- 1 1/3 cups chopped dates
- 1 T grated orange zest
- 2 1/2 tsps cinnamon
- 1 1/3 cups rolled oats
- 1 1/4 cups whole wheat pastry flour
- 1 cup packed dark brown sugar
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3/4 cup non-dairy margarine
- 1/2 cup chopped pecans
Preheat oven to 350. Spray 9-inch baking dish with non-stick spray.
Simmer juice, dates, zest, 1/2 tsp cinnamon and 1 cup water 15 minutes over medium heat, or until thickened.
Pulse oats, flour, sugar, baking soda, salt and remaining cinnamon several times in food processor. Add the non-dairy margarine and blend until well combined.
Press half oat mixture into prepared pan. Top with date mixture. Add pecans to remaining oat mixture. Press on top of batter.
Bake for 50 minutes or until top is golden brown. Cook and cut into bars.
