This recipe from Dr. Neal Barnard's cookbook, "Cookbook for Reversing Diabetes".

Note:  Use white chia seeds, as black seeds will discolor the pudding

In a blender, combine the berries, chia seeds, maple syrup, lemon juice, salt, and the non-dairy milk. Puree until the seeds are fully pulverized and the pudding begins to thicken. (Pudding will thicken as it cools.) Add an extra tablespoon of milk if needed to blend. Transfer the mixture to a bowl and refrigerate until chilled, about an hour or more. (But it can be eaten right away. So good and healthy, filled with fiber from fruit, and omega 3 fatty acids from chia seeds.)

When serving top with additional berries. Add some blueberries or other fruit for color and variety. A healthy, tasty dessert!
