  • 1 (12.3 oz) light extra-firm silken tofu
  • 1 (16 oz) can pineapple chunks, drained
  • 1 T vanilla extract

Place all ingredients in food processor or blender until well mixed. Serve with these possible toppings: cherries, raspberries or toasted walnuts.
