Simple, easy and healthy version of Paella

1 medium shallot, minced
2 garlic cloves, minced
salt and pepper to taste
1 cup basmati rice
1 tsp smoked paprika
1/2 tsp saffron
2 cups vegetable broth
12 strips of red bell pepper
seitan sausages (or buy faux sausages at store) (browned and warmed)
Braised fennel


Saute the shallot in a little water for about 2 minutes, then add the garlic and saute for another minute. Add salt and pepper to taste. Add the rice, stir well, and cook for another 2 minutes. Add the smoked paprika.

Add the saffron threads to the veggie stock and allow to re-hydrate for a minute or two. Then pour the stock over the rice, stir well, and bring to a boil. Cover and reduce the heat to a simmer. Cook for 15 minutes.

Braising fennel.......while rice is simmering, cut a large fennel bulb into slices and braise in a little warm till softened and browned. Add water as needed to prevent burning.

When paella is done, place in large serving dish, top with the sliced braised fennel and sliced vegan sausage.
