  • 18 oz Vegan Beefless tidbits (I used Gardein brand.)
  • 1 1/2 cups of Red Wine
  • 4-6 garlic cloves, minced
  • 3 large carrots, sliced
  • 4 celery stalks, sliced
  • 4 Yukon gold or Red Potatoes, cubed
  • 1 large onion, diced
  • 1 cup frozen peas
  • 1 tsp dried rosemary
  • 4 cups veggie broth (Can use 2 Not-Chicken bouillon cubes in 4 cups water instead of the veggie broth.)
  • salt and pepper to taste

Put the vegan beef tips, wine, rosemary, and garlic in a good size saucepan. Simmer over medium heat for 7 minutes until beef tips are more firm.

Add the carrots, celery, potatoes, onion, and broth. Cook over medium heat until potatoes and veggies are tender, but not mushy. Toward the end, add the frozen peas.

The author noted that she added 2 T of veggie margarine for some extra fat,  which gave it the flavor of 'grandma's beef stew.

This recipe is so delicious. My partner of four years, Bill, loved it, and practically ate the whole thing!!! Hope you enjoy!
