This easy, very tasty and healthy recipe comes from Dr. Neal Barnard's recent book addition, "Dr. Barnard's Cookbook for Reversing Diabetes". My addition would be to double the marinade for more basting while baking. So good.

  • 1/3 cup freshly squeezed orange juice (zest the orange first and save)
  • 1 tsp orange zest
  • 1 T tamari
  • 1 T tahini
  • 1/2 T pure maple syrup
  • 2 T apple cider vinegar
  • 1/2 T freshly grated ginger
  • 1 large garlic clove, grated
  • 1/4 tsp sea salt
  • few pinches crushed red pepper flakes (optional)
  • 1 package (12 oz) extra firm tofu, sliced into 1/4-1/2 inch thick squares, and patted to remove excess moisture.

Preheat oven to 400.

In small bowl, combine the orange juice, tamari, tahini, maple syrup, vinegar, ginger, garlic, orange zest, salt and red pepper flakes (if using). Whisk well until combined.

Pour the sauce into an 8 x 12 baking dish. Add the tofu and turn to coat both sides. Baker for 20 minutes. Add salt to taste. Turn tofu halfway through baking. Baste for moistness.
