(At the end of our 5 week Kickstart to Health, one participant brought this to our last class potluck. This recipe was a big hit - tasty and hearty with calls for more!)

1 T plus 1 tsp chia seeds
1 cup whole wheat flour
1/2 cup oat flour (You can make your own oat flour in high speed blender, by grinding on high speed some old fashioned rolled oats.)
2 T cinnamon
1/2 tsp nutmeg
1/2 tsp cloves
1/2 tsp ginger
2 tsp baking soda
1/2 tsp salt
1 cup chopped walnuts
1 can (1 oz) organic pure pumpkin
substitute for 2 eggs: either 2 T ground flax mised with 6 T very warm water or use Ener-G egg replacer according to package directions.
1/2 cup applesauce
2 T vanilla extract
1/2 cup agave nectar or 1 cup pure maple syrup


Mix dry ingredients with whisk or fork until well blended.

In a separate bowl, mix the wet ingredients till well blended.

Fold liquid ingredients into the dry mixture. Mix just until everything is well combined. Spoon batter into paper lined muffin tins.

Bake at 350 for 23-25 minutes. Enjoy.

Makes about 15 muffins.
