Recipe makes 10 muffins. 

  • 2 cups cornmeal
  • 2 cups oat bran
  • 4 tsps baking powder
  • 2 cups unsweetened organic apple juice

Sift dry ingredients together. Then add the apple juice, and mix till just moistened

Bake at 350 oven for 30 minutes.

Note:  These muffins are certainly different from the oil and egg filled corn muffins that folks are used to, but these are healthy and taste great with a little of non-dairy margarine and/or jam.
