This is another Food for Life recipe! Kale ups the dish's cancer fighting properties, and offers a great source of absorbable calcium. Tomatoes provide all important lycopene, a powerful antioxidant that has been shown to protect from prostate cancer, and enhance survival for those diagnosed with the disease.

1/4 cup veggie broth or water
1 large onion, diced
5 cups chopped kale
2 cans (14.5 oz each) chopped fire-roasted tomatoes, undrained
1/2 cup halved kalamata olives
1 T chopped fresh parsley
8 ounces whole wheat or brown rice penne pasta
1/4 cup vegan Parmesan cheese or nutritional yeast

In large saucepan, heat the veggie broth. Add the onion, and cook over medium heat till soft for about 3 minutes. Add the kale and the tomatoes. Bring to a boil, then lower the heat, and cook for 20 minutes. Stir in the olives and parsley, and cook for another 5 minutes.

While the kale is cooking, bring a large pot of water to a boil, and cook the penne till just tender (al dente). Drain the pasta, and the kale and tomato sauce, and gently toss. Sprinkle with optional Parmesan cheese or nutritional yeast.

This makes about 4 servings. With a hearty green salad on the side, and some oil-free multi-grain bread, you have a wonderful, healthy meal, with leftovers for the next day! How
