Basil is the queen of all herbs!

3 cps fresh basil, rinsed under cold water, dried, stems removed
3-4 garlic cloves
1/4 cp either pine nuts, walnuts or cashews
1/2 cp silken tofu
2 T vegetable broth (can use veggie cube prepared in boiling water)
1/4 cp nutritional yeast
1 T fresh lemon juice
1/2 tsp sea salt
ground pepper to taste

Chop garlic and nuts in food processor. Add the remaining ingredients and process all till well blended and smooth. Add a little more veggie broth as needed for smooth consistency.

To serve immediately, warm on low heat and mix into cooked pasta of your choice, OR freeze in container for later use. I also like to freeze pesto in ice trays and then keep frozen balls in large bag in freezer. It's a good way to preserve fresh garden basil!
