A dish that is a class favorite......comes from our Kickstart program......easy, quick, and healthy dinner. Most ingredients are always on hand. So, enjoy!

You can double, triple, quadruple recipe depending on need!

  • 3 T rice vinegar
  • 3 T soy sauce
  • 2 tsps chopped fresh ginger
  • 2 tsps minced garlic
  • 1/2 - 1 jalapeno pepper, diced
  • 2 green onions, chopped
  • 1/4 - 1/2 cup chopped cilantro
  • Soba Noodles

Boil water for soba noodles. While water coming to a boil, mix all ingredients in small bowl.

Cook noodles according to package directions. Drain and pour mixed seasonings over noodles. Toss well and serve.

The dish can be served either hot or cold. So tasty!!!!

Note: You can use any variety of soba or Asian noodles that you like.
