Tarragon, a wonderful, aromatic herb, gives a nice zest to this dressing.

1/4 cup good quality tarragon vinegar
1/4 cup mirin (Japanese wine)
2 tsps Dijon mustard
1 small garlic clove, minced
1 tsp agave nectar
2 tsps fresh tarragon, chopped or 1 tsp dried tarragon


Process all ingredients till well blended. Refrigerate. Keeps up to 5 days in refrigerator.
