- 2 oranges, peeled and seeded
- 1/4 cup rice vinegar or other vinegar of your choosing (I've used champagne vinegar and plum vinegar)
- 1/8 cup peanut butter or almond butter
- 5 almonds or cashews
- 1 tsp soy sauce
- 1/4 inch piece of fresh ginger, peeled
- 1/4 garlic clove
Blend all ingredients in high powered blender until smooth.
Add water to thin as desired.
*Note: Double the recipe and save in the fridge! Wonderful not only over salads, but over dinner bowls, sweet potatoes, anything you'd like with an orange/ginger zing!
