This recipe is from Dr. Neal Barnard's book, "Cooking for Reversing Diabetes". This dressing pairs well with Power Lunch Bowl under 'Lunches'.

  • 3/4 cup of mango chunks, either fresh or frozen
  • 2 T hemp seeds
  • 2 T freshly squeezed lime juice or red wine vinegar (I prefer lime juice)
  • 1/2 T chopped shallots or 1 T of the whitish portion of a green onion
  • 1/2 tsp Dijon mustard
  • 1/2 tsp sea salt
  • Freshly ground pepper to taste
  • 1-2 T pure maple syrup
  • 1/4 cup + 2-3 tsps water (optional)

Blend all ingredients through pepper in high speed blender or processor. then add the water and maple syrup to taste. Add more water, 1 tsp at a time, depending on your preference for thickness.
