Another fabulous recipe from Dr. Neal Barnard's, "The Cheese Trap". This dressing not only goes great on salads, but I love it over steamed, chopped kale.
Makes 1 cup.
- 1/2 cup soaked cashews
- 1 T sliced chives or green onion (green portion)
- 2 T apple cider vinegar
- 1/2 tsp Dijon mustard
- 1/4 tsp garlic powder
- 1/2 tsp sea salt
- freshly ground black pepper, to taste
- 1/3 to 1/2 cup water
- 2 - 4 tsps pure maple syrup, to taste
Note: If using a Vita Mixer, there is no need to soak the cashews. The Vita Mixer does the work!!
In a blender or Vita Mixer, blend the cashews, green onion or chives, vinegar, mustard, garlic powder, salt, pepper, 1/3 cup water, and 2 tsps maple syrup. Once smooth, you can add additional water, as desired, to thin. Then taste, and season with additional syrup, salt, and/or pepper if desired. This dressing thickens after refrigerating, so just thin with a little water as needed.
