When I prepare this dish for Food for Life participants, the common feedback is, "This tastes just like egg salad. I can't get over it!" As Mikey used to say, "Try it; you'll like it!"

1 pound firm tofu, drained and crumbled
1/4 cup vegan mayonnaise
1 T dijon mustard
1 T soy sauce
1/2 tsp ground turmeric
3-4 small scallions, finely chopped
1/4 cup or more minced celery
1/8 cup pickle relish

Place the tofu in mixing bowl and mash with a potato masher. Add the vegan may, mustard, soy sauce, and turmeric. Mix ingredients well until the tofu takes on a bright yellow color. (Add more turmeric, as needed.) Stir in the scallions, celery, and relish. Mix well, and chill before serving.
