You say you crave some chicken salad on rye! No reason to fret. This No-Chicken salad is infectious, healthy, and very tasty. And the chicks will certainly love and thank you!

1 (8 oz package) tempeh, cubed and steamed for 10 minutes
1/4 - 1/2 cup vegan mayonaisse
1 celery stalk, finely chopped
2 T pickle relish
2-3 scallions, finely chopped
2 T fresh parsley
2tsps Dijon mustard
2 tsps Braggs Liquid Aminos or low- sodium soy sauce
1 small garlic clove, minced ( optional)
salt and pepper to taste

Crumble steamed tempeh in bowl. Set aside and let cool.

In another bowl, combine the mayo, celery, relish, onions, parsley, mustard, soy sauce, and garlic. Add the cooled tempeh and mix well. Taste for seasoning.

You can try adding other herbs.....curry is nice here. Serve over whole grain bread, as a side dish or atop a green salad. How about a hearty wrap with some grated carrot, greens and sprouts? Combinations are endless! Much healthier than a Big Mac or reuben!
