2 zucchini squash
1 1/2 T capers
some black olives
several pieces of cut up tomatoes or cherry tomatoes
4 garlic cloves
juice and zest from 1/2 lemon
salt and pepper to taste

Use a carrot peeler to make thin ribbons of the zucchini. Add the rest of the ingredients and refrigerate. Can be chilled for a couple days. Enjoy!
