This recipe is from our Food for Life Diabetes series. Garbanzo beans have the highest iron content of all beans. Add to that its excellent protein source, fiber, and calcium and you have the healthiest, "heart"-iest tuna salad ever!

Ingredients:

1 (15 oz) can garbanzo beans, low-sodium, drained and rinsed
1 celery stalk, finely chopped
1/4 cup onion, finely chopped
2 T sweet pickle relish
1/4 cup fat-free vegan mayonnaise, or tofu mayo
1 T lemon juice (optional)
1 tsp mustard of your choice (optional)


Coursely chop the beans in food processor or mash with a potato masher. Do not over process to a totally smooth consistency; you want the beans to have some texture. Place beans in a bowl with the remaining ingredients. Mix well and chill.
