1 can organic black beans, rinsed and drained
1 can corn kernels (or use fresh, cut off the cob)
1 red onion, thinly sliced then halved
1 red bell peppper, chopped
Cherry tomatoes


1 T balsamic vinegar
1/2 tsp Dijon mustard
1 T olive oil (oil can be omitted and replaced with either lemon or orange juice)
