This came from one of the vendors at the Seventh Day Adventist 5K Run and Healthy Food Fest in Ft. Myers.

This serves 6.

  • 1 avocado
  • 1/2 fresh lemon
  • 1 can chickpeas, drained and rinsed
  • 1/2 cup sliced red onion
  • 2 cups grape tomatoes, slices
  • 2 cups diced cucumber
  • 1/2 cup fresh parsley
  • 3/4 cup diced green pepper
  • 1/2 tsp cumin
  • salt and pepper

Mix everything well.
