This is one of our Food for Life Kickstart recipes. Chock full of heathy protein and fiber!
- 12 cherry tomatoes, halved
- 4 green onions, sliced
- 1/2 cup dry quinoa (cook in 1 cup water; bring to boil, lower heat and simmer 10 minutes.)
- 1 1/2 cups garbanzo beans
- 3 T fresh cilantro
Orange Miso Dressing:
- 1/4 cup fresh orange juice (juice of 2 oranges)
- 1/4 cup seasoned rice vinegar
- 2 tsps white or yellow miso
- 1 T maple syrup or agave nectar
- 1 garlic clove, grated or minced
- 1 tsp ginger, grated or minced
- 2 tsps black sesame seeds (or white if can't find black seeds)
Combine the tomatoes, onions, quinoa, garbanzo beans, and fresh cilantro in a large bowl. Mix all the dressing ingredients together in a small bowl. Pour the dressing into the larger bowl and toss all of the salad ingredients together.
