Tofu is a wonderfully, healthy soy product. I buy only organic, non-GMO Tofu. Soy products, the pure, fermented kind, are protective against heart disease and breast cancer. There has been much incorrect information on the web regarding soy products. Some organizations use scare tactics regarding its use. But check out the research. You'll be surprised. 1 T seasoned rice vinegar
1/4 cup soy sauce or Braggs Liquid Aminos
1 tsp dark brown sugar
2 T mirin (which is a sweet Japanese rice wine)
1 T grated fresh ginger
1 -2 garlic cloves, minced
1 tsp Asian chili paste
1/2 T dark sesame oil


Mix all ingredients in a bowl. Then use as a marinade. Yields about 1/2 cup.
