Preheat oven to 325.

Line a baking sheet with parchment paper.

Whisk together the soy sauce, molasses, liquid smoke, olive oil and cider vinegar. Add the coconut flakes and toss till flakes are coated with sauce. Let sit for 10 minutes so coconut absorbs all the liquid.

Spread coconut on the baking sheet in an even layer. Bake for 15-20 minutes, but turn every 3 minutes.

Let the bacon bits cool completely, then store in an airtight container. Makes about 3 cups.

Wonderful on salads, in tofu scramble, on top of mac n cheez! Use your imagination.
