Cheez sauces can be found in any plant based/vegan cookbook. This is one of the best, and its variations are endless. Be creative. What would you add?
2 cups water
1/4 cup raw almonds or cashews (I prefer to use cashews in cheese sauces.)
1 1/2 tsps salt
1/4 cup nutritional yeast
1/2 tsp garlic powder
1 tsp onion powder
1 T fresh lemon juice
3 T cornstarch or arrowroot (for thickening)
Blend all ingredients till smooth. Pour mixture into a saucepan, bring to a boil, stirring constantly to prevent burning. This will thicken as it heats.
