This comes from the companion book (of the same title) to the movie, "Forks Over Knives". Tomatoes are chock full of lycopene, a powerful, cancer-fighting antioxidant. To ensure prostate health, eat at least 2-3 servings of cooked tomatoes weekly! Cooked tomatoes have more antioxidant power than raw!

1 pound Roma tomatoes, chopped
2 red bell peppers, seeded
1 garlic clove
6-8 large basil leaves
juice of 1 lemon
2 T sun-dried tomato powder (see tip)
1/4 tsp chipotle powder (or more, to taste)
1/2 cp shelled hemp seeds, optional

Puree the tomatoes, bell peppers, basil, lemon juice, tomato powder, and chipotle powder in a high powered blender, until smooth. Add the hemp seeds and blend again until creamy. Heat on stove till warm. Serve immediately.

TIP: If you're unable to find sun-dried tomato powder, you can easily make your own. Grind hard sun-dried tomatoes (not oil packed) in a coffee grinder.
