This refreshing recipe yields about 8 cups of soup. Best if chilled overnight.

  • 2 cups vegetable cocktail or tomato juice
  • 1 1/2 pounds tomatoes, cored and roughly chopped
  • 1 medium to large red pepper, seeded and roughly chopped
  • 1 medium to large English cucumber, peeled and roughly chopped
  • 1/4 cup sweet onion
  • 1 medium/large garlic clove
  • 1 T fresh lime juice, or to taste
  • 2 T chopped fresh parsley
  • fine sea salt, to taste
  • 1/2 tsp red pepper flakes, or to taste
  • 1/2 tsp freshly ground black pepper, or to taste
  • 1 1/2 - 3 T red wine vinegar, to taste
  • Chopped peppers, avocado, green onion, croutons, etc.

Combine vegetable cocktail or tomato juice, tomatoes, red pepper, cucumber, onion, garlic, lime juice, and parsley in blender, and blend until smooth.

Add in the remaining seasonings to taste, and blend again.

Pour into glass jar and chill. Chill for 3-4 hours or overnight.

Can serve with desired toppings - avocado, green onion, croutons, etc.
