A friend made this delicious meal and I just had to have the recipe! It is filled with so many healthy ingredients - antioxidants, fiber, cancer fighting compounds and heart healthy protein. Enjoy!

  • 1 cup cooked farro
  • 1 (8 oz) package tempeh
  • 1/4 cup vegetable broth
  • 1 2/ cups diced onion
  • 2 -3 garlic cloves, minced
  • 2 lbs of cauliflower florets
  • 1 cup sliced mushrooms
  • 1/2 cup veggie broth
  • 3 T raisins
  • 1 can (15 oz) diced tomatoes (keep the juice)
  • Chopped fresh basil 
  • Salt and Pepper to taste

Cook the farro ahead of time and set aside.

Slice tempeh in half and put in water. Bring to boil, lower heat and simmer for 15 minutes. When cool, dice the tempeh. Set aside.

Saute the onions and garlic in 1/2 cup broth for about 3 minutes. Add the cauliflower and another 1/2 cup broth. Simmer till cauliflower is cooked but not well done. Add the raisins and tomatoes. Add more liquid if needed to make a nice broth. Add the tempeh and farro and simmer for 15 minutes. Add more veggie broth as needed.

Add the chopped fresh basil and salt and pepper to taste. Enjoy!
