This recipe compliments of Physicians Committee! Quick, easy, tasty, and very healthy! Loaded with beta carotene. Enjoy!

  • 6 carrots
  • 1 medium onion
  • 1/8 lemon, peeled
  • 1/2 tsp salt
  • 3/4 tsp curry powder
  • black pepper to taste
  • 2 cups vegetable broth
  • 1/2 up soy milk

Steam the carrots and onion till tender.

Put in high speed blender (like a Vita Mixer) along with the ingredients through the vegetable broth. Blend on high speed till warm. Add the 1/2 cup soy milk, mix again and enjoy.

Note: If you don't have a blender that heats the soup, just heat in saucepan after well blended. Keep stirring so it doesn't burn.
