Recipe from Ayurvedic Practitioner, Xiomy Dynega

This recipe is so wonderfully delicious. Will put a smile on your face as you bite into each morsel! Serves 4

  • 2 1/4 cups raw cashews
  • 5 T nutritional yeast
  • 1/2 tsp garlic powder
  • 4 T apple cider vinegar
  • 1 cup vegan mayonnaise
  • salt and pepper
  • 1 tsp turmeric
  • 4 zucchinis

Preheat oven to 350.

Add cashews, nutritional yeast, garlic powder and turmeric in a food processor and grind until you get a fine-grain mixture.

Add the apple cider vinegar, mayo, salt and pepper to the grain mixture and pulse until mixture comes together in a nice sauce consistency.

Cut zucchinis in half and lay them on a baking sheet lined with parchment paper.

Spread the sauce over the zucchini halves uncovered.

Bake for 15-20 minutes, until the cashew cheese sauce starts to brown.
