- 1 Medium head cauliflower
- 2 Yukon gold or red potatoes
- Non-dairy milk
- 4 scallions, sliced
To cook cauliflower, either steam till very tender in steamer basket or place in microwave safe bowl, adding 1/4 cup water to the bowl, and cover with wax paper or paper towels, cook on high 7-9 minutes till tender.
While cauliflower cooks, simmer sliced scallions in 1/2 cup non-dairy milk. Peel the two potatoes, cube and cook till done.
When cauliflower is done, drain, and place in mixing bowl. Add the cooked potatoes, scallions and non-dairy milk and mash well, either with whisk or hand mixer. Add more non-dairy milk, as needed, for creamy consistency.
Season with salt and pepper.
