This is a nice dip to serve with veggies at holiday time. Amazing what you can do with pumpkin!!
- 1 can organic garbanzo beans, drained and rinsed well
- 1 can pumpkin puree (15 oz)
- 1/4 cup pumpkin seeds (chopped coarsely in blender)
- 2 T tahini
- 2 T fresh lemon juice
- 1 tsp cinnamon
- 3/4 tsp salt
- 1/2 tsp ground ginger
- 1/8 tsp ground cloves
- 1/8 tsp ground nutmeg
Place beans, pumpkin, tahini, and lemon juice in blender and puree until smooth.
Add all the seasonings to the food processor. Puree again till well blended.
Place the dip into storage container and add the chopped pumpkin seeds to the mix. Mix again, then cover and refrigerate.
Serve with baby carrots, healthy crackers, and/or other veggies of choice! Enjoy!
