Hummus makes a great appetizer, sandwich spread, or salad topping.

1 can garbanzo beans, rinsed and drained (save can liquid if using Eden Organic Beans whose cans are BPA-free or beans form aseptic packaging)
2 garlic cloves, chopped
2-3 T fresh lemon juice
1 tsp low-sodium tamari
1/4 cup kalamata olives, chopped
1/2 tsp dried thyme
1 tsp dried oregano
3 T water or broth from cans
Blend all ingredients till well mixed, and add a bit more water or bean liquid till desired consistency is achieved. Enjoy!

Note: Be creative with the hummus. You can add a variety of other ingredients to suit your taste - roasted red peppers, fresh spinach, eggplant, capers, etc.
