This recipe comes from the Forks over Knives meal planner. One of my class participants made this for our last class pot luck and it was a big hit. For more recipes go to:

  • 2 (15 oz) cans great Northern beans drained and rinsed
  • 1/4 jar roasted red peppers drained (packed in water)
  • 1/4 cup Buffalo-style hot sauce (plus more to taste, depending on preference for some heat)
  • 2 T fresh lemon juice
  • 2 T tahini
  • 1 T paprika
  • 2 garlic cloves

Using a high powered blender, combine all the ingredients with 2 T water. Puree until very smooth and creamy. Taste and adjust seasoning, adding more hot sauce if you like.

Serve hummus topped with scallions and some cut up veggies on the side.
