This delicious, healthy smoothie, loaded with anti-oxidants and fiber, comes from "Dr. Neal Barnard's Cookbook for Reversing Diabetes". 

  • 3 cups packed baby spinach
  • 1/2 cup sliced overripe banana, fresh or frozen
  • 1/2 cup sliced or cubed cucumber
  • 1/4 cup fresh parsley leaves (optional)
  • 1 lemon, peeled (can leave whole, seeds intact)
  • 1 -2 T hemp seeds
  • 1 1/2 cups frozen mango cubes
  • 3/4 - 1 cup water

In high speed blender, combine the spinach, banana, cucumber, parsley, lemon, hemp seeds, 1 cup of the mangp and 3/4 cup water. Puree until smooth.

Add the extra 1/4 cup water if needed to thin, and add the additional 1/2 cup mango to sweeten the taste.
