This recipe comes from Helynskitchen.com. I adapted it by adding more spices and additional oats for binding.

  • 3 T ground chia seeds plus 6 T water
  • 2 cups soy curls (ordered from Butler Soy Curls website)
  • 1/2 lb shiitake mushrooms
  • 1/2 cup finely diced apples
  • 1 1/2 cups navy or any white beans (15 oz can)
  • 2 T maple syrup
  • 1/2 tsp natural maple flavoring
  • 2 tsps ground sage
  • 2 tsps ground fennel seed
  • 3 tsps onion flakes
  • 1 1/2 T tamari
  • 1/2 tsp red chili flakes
  • 1/4 cup oats

 

  • Cover curls in water and hydrate for 10 minutes.
  • Mix chia with water and set aside.
  • Line baking sheet with parchment paper.
  • Preheat oven to 350.
  • Remove stems from mushrooms, chop mushrooms roughly and water saute them until tender. Make sure most of water is cooked off.
  • Drain the curls and squeeze out as much of the water as possible.
  • Drain and rinse the beans.
  • Add the mushrooms and all remaining ingredients, EXCEPT the apples, to a food processor, and pulse until combined but remain chunky.
  • Fold in the apples.
  • Shape mixture into logs.
  • Place on baking sheet and bake for 30 minutes turning the over once or twice to ensure an even color and even heating. They are very gentle until they're cooked.
