One of our Green Noshers prepared this recipe from Mark Bittman's book, "Vegan Before 6". They are scrumptious! I'm always looking for different ways to prepare 'burgers'! I adapted this slightly to cut down on salt and omit the original included olive oil.

1 T ground flax meal mixed with very warm water.
2 cups cooked or canned black, white or red beans, chickpeas, or lentils, drained, liquid reserved. (Only reserve liquid from Eden Organic beans - no BPA's.)
1 small onion, chopped
1 T garlic, minced or diced
1/2 cup rolled oats
4 carrots, grated (1 1/2 cups)
1/4 cup fresh parsley or cilantro
2 tps chili powder or spice mix of your choice
1/2 tsp salt, optional
black pepper, to taste


Mix the ground flax meal with warm water. Whisk till it gels and set aside.
Combine the beans, onion, garlic, oats, carrots, parsley,ground flax, and spices in food processor. Pulse till well combined. (Make sure it doesn't puree!)
Pinch a bit of the mixture to make sure it holds together. (If needed, add a bit more oats to bind.)
Shape into patties, then refrigerate for several hours before continuing.
Coat the bottom of a large nonstick pan with a little oil. Heat pan to medium. Then brown burgers on each side, about 4-5 minutes each side.
