There's an endless variety of 'plant based burger' recipes. This concoction with black beans was created after trying many recipes, and eventually adding my own favorite ingredients to create a heart healthy and tasty good old burger.
2 cans black beans, drained and rinsed well
5 scallions, chopped
2 garlic cloves, crushed
1 carrot, grated
1 can chopped green chilies
2 tsps ground cumin
2 tsps chili powder
1 tsp minced onion flakes
1/2 cp or more of oat bran
Drain and rinse beans well. In food processor, chop the scallions, garlic cloves, grated carrot and can of green chilies. Add the beans, the rest of the seasonings, and process till well blended, but not pureed to mush!
Put ingredients in a large bowl and add the 1/2 cp of oat bran, and mix well. Then form the burger patties. If you need more bran to help patties hold together, add another 1/4 cp and mix well. You'll get the feel of when enough is enough.
After forming the patties, put on a baking sheet, cover with foil, and bake in 375 oven for 20 minutes. Remove the foil and bake for another 15 minutes, or till patties are brown.
You can also brown patties in a scant amount of oil, about 7 minutes per side.
Serve the patties on whole wheat buns with your favorite toppings - onion, salsa, tomato, lettuce. These are so much tastier than those dastardly Angus beef burgers.
