Soy curls are a great meat substitute. Low fat/high protein! Can be used in soups, stews, tacos, fajitas, wraps, etc. Check out Butler website for recipes.

  • 1 8 oz package Soy Curls. Cover with warm water to hydrate, and soak for 10 minutes.
  • 2 medium bell peppers, sliced in strips ( any color of your choice)
  • 1 sweet onion, cut in strips
  • 1 pkg Fajita (organic) seasoning or 4T Butler Chik-Style seasoning
  • 1/4 cup water
  • 2 T oil (optional)
  • 10 Tortillas

In large skillet, saute onions and peppers in water or 1 T oil, until tender. Do not overcook.

Drain the soy curls. Heat the skillet and in small bowl mix the Fajita seasoning with 1/4 cup water, and mix well. Pour over the curls and heat the curls. Then add the veggies to the curls. Saute for 1-2 minutes.

Sometimes I add sauteed mushrooms to the veggies.

Serve warm in your favorite tortilla. Can top with salsa and gaucamole!
