This recipe comes from PCRM's "Cancer Survivor's Guide", a guide for class participants who participate in our Cancer Series. Baked Tofu can be used in many ways: use as a snack, in stir-fries, over a salad or in soups. Enjoy!

  • 1 pound firm or extra-firm tofu
  • 2 T soy sauce
  • 2 T water or veggie broth
  • 2 tsps liquid sweetener
  • 2 tsps balsamic vinegar
  • 2 tsps minced garlic
  • 1 1/2 tsps fresh grated ginger
  • 1/4 tsps ground black pepper

Preheat oven to 400. Cut tofu into 4 equal slices and arrange in a single, tightly packed layer in a 9 inch square baking dish.

Combine the soy sauce, water, syrup, vinegar, garlic, ginger, and pepper in a small bowl. Pour evenly over the tofu and bake uncovered for 30 minutes.

Store in a covered container in the frig, the tofu will keep for up to 3 days.
