  • 3 1/2 T freshly squeezed lime juice
  • 2 tsps maple syrup
  • 1 1/2 tsps ground cumin
  • 1 tsp oregano
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp sea salt
  • 1/8 tsp allspice
  • 1 package (12 oz) extra-firm tofu, sliced into 1/4-1/2 inch thick squares, and patted to remoe excess moisture.

Preheat oven to 400.

In a 9 x 12 baking dish, combine the lime juice, syrup, cumin, oregano, chili powder, paprika, salt, and allspice. Add the tofu and turn to coat both sides. Bake uncovered for 20 minutes, or until the marinade is absorbed, turning once.

Serve this over brown rice, quinoa, or pasta, or serve it cooked and cubed in a salad.

Makes 4 servings.
