Chef AJ is a culinary instructor, chef, and stand-up comic in another life. This dressing is wonderful over steamed greens or thinned with water for a tasty, healthy salad dressing. 1 (15 oz) can cannellini beans, drained and rinsed
juice and zest of one organic lemon (if needed, add more lemon juice to make 1/4 cup)
1/2 cup water
2 T salt-free mustard (Chef AJ uses Westbrae Stoneground)
3/4 ounce pitted dates (about 3 deglet dates)
1 garlic clove


Place all ingredients in a blender or a high powered Vita Mixer, and mix until smooth. This sauce is so versatile - over steamed veggies, rice, salad dressing.
